This creamy Cheesy Vegetable Medley features a rich, Velveeta-style cheese sauce that reheats wonderfully, making it an excellent choice for gatherings, family dinners, or potluck meals. It is THM S-friendly, low carb, and gluten free.

This dish was inspired by the cheesy California-blend vegetables often served at church dinners during childhood, but with a more homemade and grown-up twist. The result is a comforting side dish with a smooth, flavorful cheese sauce made from real cheese rather than processed products.

Although this recipe is richer and more calorie-dense than everyday meals in my kitchen, it works perfectly when serving guests or preparing food ahead of time. One of the best things about it is how well it reheats without losing texture or flavor.

I first prepared this recipe one evening while Ryan was on call at the hospital. As usual, he arrived home much later than expected. Thankfully, the vegetables held up beautifully over low heat for hours, which turned out to be a major success.

Choosing the Vegetables

For this recipe, I used a large bag of frozen Normandy-blend vegetables. Normandy blends are similar to California blends but often include squash in addition to vegetables like broccoli and cauliflower.

Many frozen vegetable mixes also contain a fair amount of carrots. Since carrots are slightly starchier than vegetables such as broccoli or squash, those following a stricter THM S approach may want to limit the amount of carrots included.

If you consume more than a small serving of carrots, the dish may fit better into an “S Helper” category rather than a pure S meal because of the higher starch content.

The Cheese Sauce

The highlight of this recipe is definitely the cheese sauce. It is creamy, rich, and reminiscent of Velveeta sauce, but with a more sophisticated flavor and made using real cheese.

The sauce is generously portioned and coats the vegetables beautifully. It is flavorful enough that I am already looking forward to using it in other recipes in the future.

This cheesy vegetable medley is especially ideal for:

  • Potluck dinners

  • Holiday gatherings

  • Feeding guests

  • Make-ahead meals

  • Comfort-food side dishes

Because the sauce reheats so well, leftovers remain creamy and delicious even the next day.
