This soft and airy mango cake roll is one of my favorite desserts to make at home. Filled with fresh mango and smooth whipped cream, it has the flavor and appearance of a bakery-style treat while being surprisingly simple to prepare in your own kitchen.
Why You’ll Enjoy This Mango Cake Roll
I love the delicate texture of the Japanese-inspired chiffon sponge, paired with the sweet freshness of ripe mango and fluffy cream. It feels elegant enough for celebrations or guests, yet easy enough to enjoy whenever the craving strikes. Every slice delivers a lovely balance of light sweetness, creamy filling, and juicy tropical fruit.
Ingredients
(For the complete measurements and ingredient list, refer to the recipe card below.)
Dry Ingredients for the Chiffon Sponge
45 g cake flour
1 teaspoon baking powder
¼ teaspoon sea salt
Wet Ingredients for the Chiffon Sponge
25 g granulated sugar
50 ml full-fat milk
3 egg yolks
40 ml neutral-flavored oil such as canola or grapeseed
¼ teaspoon vanilla extract
Meringue Ingredients
4 egg whites
50 g granulated sugar
¼ teaspoon cream of tartar
Stabilized Whipped Cream Filling
1¼ teaspoons unflavored gelatin powder
5 teaspoons water
1¼ cups whipping cream (33% milk fat)
1 tablespoon plus ¼ teaspoon sugar
1 ripe mango
Instructions
Preheat your oven to 325°F and prepare an 8 × 12-inch baking tray with parchment paper or a silicone liner.
In a medium bowl, sift together the flour, baking powder, and sea salt. Mix well.
Create a small well in the center and add the sugar, milk, egg yolks, oil, and vanilla extract. Stir gently until the batter is smooth, being careful not to overmix.
In a separate clean bowl, whip the egg whites with cream of tartar on low speed until foamy. Gradually add the sugar while increasing the speed, then continue beating until stiff peaks form.
Fold one-third of the meringue into the batter to lighten the mixture. Carefully fold in the remaining meringue in two batches until fully incorporated.
Pour the batter into the prepared pan and lightly tap it on the counter to remove excess air bubbles. Bake for 14–16 minutes, or until the center springs back and a skewer inserted into the cake comes out clean.
Allow the cake to cool in the pan for about 5 minutes. Turn it out onto a cooling rack, remove the parchment, and leave the cake top-side up while preparing the filling.
To make the cream filling, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom. Gently warm until fully dissolved, then cool slightly.
Whip the cream with sugar until soft peaks form. Slowly drizzle in the dissolved gelatin and continue whipping until medium peaks develop.
Peel and cut the mango into thin slices or small cubes.
Place the cooled sponge cake onto parchment paper. Spread the stabilized cream evenly across the surface, then arrange the mango pieces in a single layer.
Starting from one short side, carefully roll the cake using the parchment paper to help shape it. Wrap tightly in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
Yield and Timing
This recipe makes approximately 8–10 slices.
Preparation time: about 1 hour, including chilling
Baking time: 14 minutes
Total time: around 1 hour and 14 minutes
Recipe Variations
Sometimes I replace the mango with strawberries, peaches, or kiwi for a different fruity flavor.
For extra moisture and flavor, I occasionally brush the sponge with simple syrup or mango juice before spreading the filling.
You can also mix finely diced mango directly into the whipped cream for an even fruitier filling.
Storage Tips
I keep any leftovers tightly wrapped in the refrigerator, where they stay fresh for up to 2–3 days. Freezing isn’t ideal for this dessert since the cream and fruit are best enjoyed fresh. If the cream feels too firm after chilling, I let the slices rest at room temperature for about 10 minutes before serving.
Frequently Asked Questions
How can I stop the cake from cracking while rolling?
I find it easiest to roll the sponge while it’s still slightly warm. Using parchment paper as support also helps the cake stay flexible and smooth during rolling.
Can this cake be prepared in advance?
Absolutely. I often bake the sponge a day earlier, then assemble it with cream and mango before serving. Once chilled, it stays fresh and delicious overnight.
Is gelatin necessary for the whipped cream?
Gelatin helps stabilize the cream so it holds its shape longer and prevents it from becoming runny. If serving immediately, you can leave it out, though I personally prefer the added stability.
Can I use low-fat cream instead of whipping cream?
I recommend using full whipping cream with at least 33% milk fat because it whips properly and creates the light, stable texture this dessert needs. Lower-fat alternatives don’t whip as effectively.
What size baking pan works best?
An 8 × 12-inch pan creates the ideal sponge thickness for rolling. Using a much larger pan may result in a sponge that’s too thin and fragile.
Conclusion
This Fresh Mango Cream Japanese Cake Roll combines a soft chiffon sponge, smooth whipped cream, and vibrant tropical mango into one elegant dessert. It’s light, refreshing, and perfect for tea time, gatherings, or special occasions. I hope this homemade version brings the same bakery-style joy and indulgence into your kitchen.
